Depends on the board, but 6 or more is a fairly standard number. One of those is normally used for the optical drive. The cheap adapters often have two ports, for more money you can buy adapters with up to 8 or even 16 ports. SATA is designed to be backward compatible, and the port and drive will autonegotiate the fastest speed supported by both.
Occasionally you get a combination of chipsets that don't play nice, so the drives usually have a jumper that forces them to a slower mode to bypass the negotiation phase.
